For this Thanksgiving, I share with you my vegan casserole made with sweet potatoes and kale cooked in coconut milk and topped with chick pea crumbs. Vegans and vegetarians will love this dish, which also makes for a wonderful side dish to your Thanksgiving turkey. - Kale (15 oz.)
- Onion (1 medium to large)
- Coconut Milk (1 can)
- Cumin (1 tablespoon)
- Coriander (1 tablespoon)
- Paprika (1 teaspoon)
- Chick Pea Crumbs or Regular Bread Crumbs
- Salt
- Pepper
- Olive Oil
