For all of you vegetarians who feel left out on turkey Thanksgiving day, I made a tofu loaf with spinach, zucchini, carrot and peas, and flavored with paprika, coriander and cumin spices.
Ingredients:
- Firm or Extra Firm Tofu (3 cakes)
- Zucchini (1, diced)
- Mushrooms (8 oz)
- Frozen Peas & Carrot (1 1/2 cup)
- Frozen Spinach (16 oz. bag)
- Garlic (5 cloves, minced)
- Paprika (3 teaspoons)
- Cumin (3 teaspoons)
- Coriander (3 teaspoons)
- Salt (3 teaspoons)
- Pepper (1 1/2 teaspoon)
- Olive Oil (1/2 cup into casserole)
- Panko Breading (2 cups)
- Eggs (4 beaten)
